| Carrot Cookies Ingredients :
3/4 cup sugar
3/4 cup shortening or margarine
2 cups flour
2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
1 cup cooked mashed carrots
1 tsp. vanilla
Instructions :
Cream shortening. Add sugar gradually, then beaten egg. Sift dry ingredients and add to
creamed mixture. Add carrots and vanilla. If too stiff, add a little milk. Drop on greased
cookie sheet. Bake at 350 degrees F for about 10 minutes, or until light brown underneath.
These cookies are good iced with an icing made from icing sugar and orange juice.
