Carrot Cake with Cream Cheese Frosting

3 cups flour
2 teaspoons baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
2 cups sugar
1/2 cup oil
1/2 cup buttermilk
3 eggs
1 cup crushed pineapple in juice
2 cups grated carrots
1 cup chopped walnuts
1 1/2 teaspoons vanilla

In a large mixing bowl, stir together the first 5 ingredients until well combined. Add oil, eggs, buttermilk and vanilla, beat well. Stir in pineapple, carrots and nuts. Combine well, but don't overbeat. Pour into a greased 9x13 pan. Bake at 350 for 1 hour.
Frosting, combine 2 cups icing sugar, 8oz. cream cheese and 2 Tbsp. butter. Beat well, you can add a bit of
lemon juice.
NOTE: This is a nice easy cake, low fat too!
