Fresh Apple Cake

3/4 cup butter
1 1/2 cups sugar
2 eggs, beaten
3 cups chopped apples
2 1/4 cups flour
1 1/2 tsp. soda
3/4 cup strong cold coffee
1 tsp. vanilla
1/2 cup brown sugar
1/2 cup chopped nuts

Cream butter and sugar. Add beaten eggs. Mix in thoroughly, flour, soda, and coffee. Add 3 cups finely chopped apples and 1 teaspoon vanilla. Put in 9x13 inch pan. Combine 1/2 cup brown sugar and 1/2 cup chopped nuts. Sprinkle on batter. Bake 1 hour at 350 degrees.

Caramel Sauce:
1/2 cup half & half
1 tsp. vanilla
1 cup brown sugar
1/4 cup butter

Bring slowly to boiling point, stirring constantly. Reheat and pour over cake when served.
