Microwave Peanut Brittle (adult supervision for younger children)

1 cup sugar
1/2 cup white corn syrup
1 cup dry roasted peanuts
1 teaspoon butter
1 teaspoon vanilla extract
1 teaspoon baking soda

Mix sugar and corn syrup in a 1 1/2 quart casserole dish. Microwave on high for 4 minutes. Stir in peanuts, microwave on high for 3 to 5 minutes, or until light brown. Add butter and vanilla, to syrup and peanut mixture. Mix well, microwave on high for 1 to 2 minutes. Use a pot holder, the bowl will be hot. Add baking soda, and stir until foamy. Quickly pour mixture onto a lightly greased cookie sheet. Let cool for 30 minutes to one hour. Do not cool refrigerator, as it might turn sugary and it won’t be crunchy.
