Pineapple-Cherry Salad

Servings: 10 to 12
1 (20 ounce) can red sour cherries
2 (3-ounce) packages cherry-flavored gelatin
1 cup boiling water
1 (20-ounce) can crushed pineapple
1/2 cup chopped nuts
1 cup cherry liquid
1 cup sugar
Juice of 1 lemon
Red food coloring, if desired
Drain cherries; reserve liquid. Dissolve gelatin in boiling water; cool. Stir in pineapple, drained cherries, and nuts. Chill until mixture begins to thicken slightly. Combine cherry liquid, sugar, lemon juice, and food coloring and boil 1 minute. Cool thoroughly; then add to gelatin mixture. Stir often until mixture is thick. Spoon into 2-quart mold or shallow pan and chill thoroughly.
