| Mom's German Lentil Soup
Ingredients:
1 Lb. Dry Lentils
1 Cup Celery (diced)
2 Medium Onions (sliced)
2 Medium Carrots (diced)
2 Quarts Water
1 1/2 teas. Salt
1/2 teas. Pepper
1/2 teas. Dry Thyme
2 Bay Leaves
1 Lg. Potato (pared)
1 Ham Bone (minus the fat)
2 Tbsp. Lemon Juice
1/4 Lb. Bacon (diced)
Instructions:
This is a very hearty soup. I like to make this after a holiday meal when
there is a leftover hambone and I like to add more ham to it. It's more
like a stew, but worth the trouble!!
Rinse and Soak Lentils in cold water overnight before preparation.
Sauté bacon in Dutch oven. Add celery, onion and carrots. Sauté until
golden brown. Add water, lentils and dry ingredients. Grate potato into
this mixture and add ham bone. Simmer for 3 hours. Remove bay leaves and
hambone. (Be sure to add ham to this mixture if you like). Add lemon juice
and serve.
